Ingredients
• 1 large cauliflower, cut into florets
• 2 tbsp olive oil
• 1 tsp ground cumin
• 1 tsp ground coriander
• ½ tsp paprika
• 2 cloves garlic, minced
• Juice of 1 lemon
• 2 tbsp chopped cilantro
• Salt and pepper to taste
Procedure
1. Preheat oven to 200°C.
2. Mix olive oil, cumin, coriander, paprika, garlic, lemon juice, salt, and pepper.
3. Toss cauliflower florets in chermoula mixture.
4. Spread evenly on baking tray.
5. Roast for 25–30 minutes until tender and slightly charred.
6. Garnish with chopped cilantro and serve warm.
