Ingredients

  • 2 zucchinis, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 eggplant, thinly sliced
  • 2 potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 50g grated Gruyère (optional)

Procedure

1. Preheat oven to 180°C.

2. Lightly grease a baking dish with olive oil and spread sliced onions and garlic at the base.

3. Arrange zucchini, tomato, eggplant, and potato slices vertically in alternating pattern.

4. Drizzle with olive oil and season with thyme, oregano, salt, and pepper.

5. Cover with foil and bake for 40 minutes.

6. Remove foil, sprinkle cheese (if using), and bake another 20 minutes until golden and tender.

7. Rest for 10 minutes before serving.
